Our Mini Coconut Cakes with Coconut Cream are delicious and beautiful, and best of all, they&#8217;re quick and easy.&#8221;<\/p>\n<p>From brunch to sides, and breads to desserts, rely on the Southern heritage of Martha White to make your special occasions a big hit.<\/p>\n<p>Download and print the free Martha White Springtime Cookbook at <a href=\"\/downloads\/Martha%20White%20Cookbook.pdf\" target=\"_blank\">www.marthawhite.com<\/a> to make this recipe and others.<\/p>\n<p>And be sure to join the Martha White community on <a href=\"http:\/\/www.facebook.com\/MarthaWhiteBaking\"  target=\"_blank\">Facebook<\/a> and <a href=\"http:\/\/pinterest.com\/bakemarthawhite\/\"  target=\"_blank\">Pinterest<\/a>.<\/p>\n<h3>Mini Coconut Cakes with Coconut Cream<\/h3>\n<p><strong>Coconut Cupcakes<\/strong><\/p>\n<p><strong>Crisco<\/strong><sup>\u00ae<\/sup> Original No-Stick Cooking Spray<br \/>\n1 large egg<br \/>\n1\/3 cup <strong>Crisco<\/strong> Pure Vegetable Oil<br \/>\n1 cup unsweetened coconut milk<br \/>\n2 (7 oz.) packages Martha White<sup>\u00ae<\/sup> Wild Berry Flavored Muffin Mix<br \/>\n1\/2 cup + 2 tablespoons sweetened shredded coconut flakes<\/p>\n<p><strong>Coconut Cream Filling<\/strong><\/p>\n<p>1 (8 oz.) package cream cheese, softened<br \/>\n1\/3 cup unsweetened coconut milk<br \/>\n1 cup powdered sugar<br \/>\n1 cup frozen whipped topping, thawed<br \/>\nToasted sweetened flaked coconut, for garnish<\/p>\n<h3>Directions<\/h3>\n<p style=\"padding-left: 30px;\"><strong>1. HEAT<\/strong> oven to 350\u00b0F. Spray 12 muffin cups with no-stick cooking spray.<\/p>\n<p style=\"padding-left: 30px;\"><strong>2.<\/strong> For Cupcakes: <strong>BLEND<\/strong> egg, oil, and 1 cup coconut milk in large bowl. Stir in muffin mixes and 1\/2 cup coconut just until blended. Fill prepared muffin cups 3\/4 full. Sprinkle with remaining coconut.<\/p>\n<p style=\"padding-left: 30px;\"><strong>3. BAKE<\/strong> 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool in pan 3 to 4 minutes. Remove from pan. Cool completely on wire rack.<\/p>\n<p style=\"padding-left: 30px;\"><strong>4.<\/strong> For Filling: <strong>BEAT<\/strong> cream cheese and 1\/3 cup coconut milk in medium bowl with electric mixer on medium-high speed until well blended. Add powdered sugar. Beat until light and fluffy. Fold in whipped topping.<\/p>\n<p style=\"padding-left: 30px;\"><strong>5. SLICE<\/strong> cupcakes horizontally. Spoon filling on bottom half. Replace top half. Top with a dollop of filling. Sprinkle with toasted coconut.<\/p>\n<p>Makes 12 mini cakes<\/p>\n<hr \/>\n<p>Crisco is a trademark of The J.M.
